Rigatoni With Greens and Sausage
We’ve officially entered the winter season. Goods news is the shortest day of the year is now behind us! I get so excited because as soon as January 1st hits, I have this mental shift and start putting pen to paper to map out the Weidner Garden. What can I say? I’m an enthusiastic planner. (read: nerd)
Anyway, this is the last meal I’m cooking at home before heading south to visit 863 family...

Mo-Rock-On Chicken. (I really am sorry.)
I think it’s pretty obvious, but it’s comfort food week at the Weidner abode. Is this a bad thing? Ask my waistline. Is this a good thing? Ask my husband.
Moroccan Chicken with Couscous:
What it takes for 4:
* 6 boneless, skinless chicken thighs
* 2 onions, thinly sliced
* 3 carrots, diced
* 1 (14.5 oz) can whole peeled tomatoes
* 1 (14.5) can chickpeas, drained and rinsed

I Love Tacos. Too Much.
I really, really love tacos. I could eat them at any time, in any form. My friends laugh at me because when it comes to grabbing a bite, I always say, “We could get a taco!” When it’s time to meal plan, don’t put it past me to have some sort of taco included in the weekly menu. I even said to Aaron once, “We’re going to make a child out of a taco.”
Too...

A Christmas Poem. No, I'm Serious.
The sniffles continue, the aches come and go. I looked outside and behold, there’s snow! Our bowls are filled with spicy thai curry. We sit on the couch as the wine makes me slurry.
Alright I can sense you shaking your head. Moving on.
Karee Curry with Veggies and Tofu:
What it takes for maybe 4:
* 2 cans coconut milk
* 3 Tbs. karee curry paste (or yellow curry paste)
* 3 Tbs. fish...

Seafood Posole
Around our house we’re a little sniffly, a little achy and frankly worn out from the week. You might want to stay a few feet away. No, not you orange juice. You can hang. So can you red wine.
Enter healing soup of the night: Simple Seafood and Spinach Posole
What it took for 2:
* 1 tbs. extra virgin olive oil
* 1 small white onion, chopped
* 4 garlic cloves, minced
* 3 cups clam...

Spicy Chicken Salad
I’m pretty brain-dead right now. But I do have a few thoughts to throw out into the interwebs.
1) I got my teeth cleaned today and I feel like Giada De Laurentiis.
2) We may have ice on the way. AKA - I am never leaving my bedroom.
3) I have a cardboard cut. Did you know there is such a thing? There is. And it’s on my finger.
4) There are faint hints of aches in my joints and a...

Monday, With Cream
Today I sat at my holiday-infested desk and stuffed roughly 450 Christmas cards into envelopes. This could have been a nightmare, but guess what? This year we ordered the peel and seal style envelopes! Translation: No licking. No transporting rosemary flavored cracker crumbs to the envelope flap. No raw/sour tongue for the next month. Merry Christmas to me!
It’s the little things.
Spaghetti with...

Where I Stand
80% of the Christmas gifts are wrapped and under the tree. 12% is sitting on my kitchen table. The last 8% has yet to arrive. 18% of the lights are burned out on our little Christmas tree. 65% of me doesn’t care. 30% of the snow has melted. 25% of it has been replaced by ice. 95% of the current temperature is ridiculous. The goods news is, 100% of me is more than satisfied with a simple...

This morning Aaron and I woke up with the same craving: a fire, a movie and turkey tacos.
Who says we can’t have turkey tacos for breakfast?
Enjoy your weekend!

I Dream Of Ravioli
If there is one thing that makes me giddy it’s when dinner makes itself. And if there is one thing that makes me piddy (piddy is the opposite of giddy) it’s thinking I have an onion or a shallot to use in the dinner and discovering I don’t. I could drive to the store of course and pick one up, but I’m home. And it’s cold out. I could I-dream-of-Jeannie one but I’m not Barbara Eden. Oh! While...
Going out to dinner tonight with some great friends! Going to enjoy good pizza, wine, laughs, merriment, CHRISTMAS CHEER.
Sorry, that was too much.
I’ll leave you with a picture of who will be missing out.
Seriously, if I look at this picture too long I’ll cancel dinner plans.
Night!

Not That Kind Of Mojo, Baby
What is a mojo sauce you ask? Well, I can tell you what it’s not. It doesn’t involve a dose of Austin Power’s charm or a spoon full of self-esteem or even a cup of charisma, although I’m wondering as I type this out if I’m on to something.
PATENT PENDING! I said it first.
What a mojo (pronounced Moe-hoe) sauce is though is a flavorful combination of garlic, citrus and chiles, stemming from Cuba...

Wild Salmon With Lentils
We have less than three weeks until Christmas. Did you know that? Are you done shopping? Is everything wrapped? Is your tree up? Are all your travel plans set in stone? Do you have to ship anything this year? Have you planned the Christmas menu? Why was Tumblr down so long? Am I stressing you out? Because I’m this close to a brain hemorrhage. SURPRISED?

Ok, after a quick...

Brats In December. Why Not?
I realize it’s December and we’re supposed to be eating casseroles and holiday cookies and drinking eggnog. I know. And I try. But this summer Aaron surprised me with dinner one evening and I’ve not been able to get the meal out of my mind. I’ve asked him a bazillion times since then to pleaaase, pleaaaaaase make it for me again. Yesterday was my lucky day. And it was a surprise again because he...

Boy, do I have a ton to get done today. Have no fear, oatmeal with cinnamon, blueberries, bananas, honey and flax seed is here!
Oh and coffee. Coffee was definitely here, too.

It's How We Roll
A couple of weeks ago Aaron came home from a business trip, buzzed with excitement. The trip was cool for him on multiple levels: he got to hang out with a famous NBA player, sit courtside at an NBA game and most importantly, he got to taste the food prepared by the basketball player’s personal chef. Aaron said to me, “I wish I had a personal chef.” To which I replied, “You...

Baked Chicken In Tomatoes
It’s First Friday tonight, so instead of cooking, I’ll be hanging out in our gallery at work. If you’re in the Kansas City area, come by and say hi! The art is so, SO good, you won’t believe it. Sneak peak at the artist - www.evanashby.com
Here’s another older post from a few months ago, just to tide you (read: me) over.

Chicken WANGS!
We’re having leftover chili tonight, so I thought I’d post something from this summer for fun!
The original post date - August 24th.

Yesterday a handful of great friends and I got together to get some early b-day celebrating going on. In true fashion, my darling husband came through with the best, most fitting gift for me. A food crawl. Hitting four local favorite KC...

December Comfort
With weather like this I have 3 words for you: Shredded Chicken Chili.
I mean, is there really anything more to say?
You know me, of course there is! A blazing fire, a bottle of red wine, warm blankets, wool socks, a good movie, a hot shower, a snuggly puppy, an abundance of questions for husband about movie during movie, and a second serving of that chili.
That’s more like it.
Shredded...
